How do we create the tastes of 21st century foods?

Emphasizing the delicious and nutritious, we will explore local and seasonal ingredients, age-old traditions and contemporary recipes, essential culinary techniques, and current safety standards. We will create a wide range of dishes while being mindful of reliable sources of information, as well as budgetary constraints. Students will appreciate the importance of organization and teamwork in the kitchen and will learn how to manage resources. With an emphasis on the current dietary guidelines, students will develop an awareness of the link between making good choices and health outcomes. Practical Lab classes will reinforce essential culinary skills that lead to successful food preparation. Students will also have the opportunity to meet professionals who have careers in the culinary industry.
